Crispy Baked Black Bean & Spinach Flautas

This recipe is stupid easy. Frozen spinach, canned beans come together in minutes! These oil free flautas are crispy and delicious and a perfect addition to any party. Great appetizers or as an entree too. Pair these with salsa and guacamole for your next football game or Cinco de Mayo party.

Crispy Baked Black Bean & Spinach Flautas

Ingredients (2 servings)

  • 8-10 tortillas
  • 1 box of frozen chopped spinach, thawed and drained
  • 1 can of black beans, drained and rinsed (refried is delicious too!)
  • 2 tbls. chopped onion
  • 1 tbls. red miso
  • dash of enchilada or fajita seasoning
  • 1 tbls. nutritional yeast

Instructions

Preheat oven to 400F.

Make sure spinach is as dry as possible by squeezing and pressing dry with towels.

Mix the filling ingredients in a bowl and microwave for 3-5 minutes, stopping to stir frequently, until the filling is heated thoroughly.

Spoon a couple of tablespoons of filling onto a tortilla, roll tightly, and secure with a toothpick. Place seam side down on a parchment lined baking sheet.

Repeat with the remaining filling.

Bake for about 20 minutes checking frequently after 20 minutes until the desired browning and crispiness is achieved.

Flautas should turn golden brown and feel rigid to the touch.

***Corn tortillas may also be used for this recipe but should be individually heated in a skillet before filling and rolling to prevent cracking.
