Thick & Hearty Corn & Potato Chowder

Corn Chowder

Burr...

When the winter blues have you down, brighten up the day with this colorful and flavorful chowder.

In this recipe I used chickpeas and potatoes to thicken this chowder into a velvety texture. Thats what really gives it a thick & hearty feel that keeps you feeling full and warm on the coldest winter day.

During the winter I use frozen corn, but this is also a lovely soup in the summer with fresh summer sweet corn. I don't make it quite as thick in the summer and serve it alongside a bright, crisp salad.

Any time of year this chowder is welcome on my table!...

Roasted Brussels & Chickpeas Over Mashed Turnips & Cauliflower

These days I love to explore, mix it up and try new things, especially since there are so many veggies I never even tried! The next time you think you have tried it all, head to your local asian food market and discover vegetables you never knew existed! But even more common veggies, like turnips, never made it onto my table very often, until I went plant based....

Watch Forks Over Knives and call me in the morning

Forks over knive

If I could offer one bit of advice for every person on the planet it would be:

"Watch Forks Over Knives"

Oh how simple it sounds, but the impact of this lil ole documentary is palpable.

Never before has there been a better one stop shop for learning about the human body, the obesity and disease epidemic, how and why we eat, and how to take control of your own health.

Fat Free Vegan Spanish Rice

November 11, 2014 By Staci

Spanish Rice

This rice is a tex-mex classic that any mexican food lover like me needs to know how to make. Rice is a tasty, filling and affordable addition to any meal and this version offers great flavor with no added fat. Traditional spanish rice uses quite a lot of oil to toast the rice which isn't needed, especially in a non-stick skillet such as my favorite ceramic one pictured above. Spanish rice also traditionally uses chicken broth, so swapping it for a vegetable broth makes this classic easily plant based....
