Have and ice cream addiction? Do yourself a favor and learn how to make tasty plant based ice cream (sometimes called nice cream) at home.
I like to use frozen bananas or other fruit combined with various flavorings to achieve the desired flavor.
In this recipe the end result tastes like chocolate covered strawberry ice cream! Yum! Guilt free ice cream? Eat up.
Chocolate Dipped Strawberry Soft Serve

Ingredients (4 servings)
- 1/2 lb. strawberries, washed and stemmed
- 2 frozen bananas
- 2 tbls. fig jam
- 1/2 tsp. lemon juice
- 3 tbls. shaved dark chocolate, divided
Instructions
In a food processor pulse the strawberries, bananas, jam and lemon juice until smooth (add a bit of soy milk if it is too thick)
Once processed stir in all but 1 tsp (reserve for garnish) of the chocolate.
Place the mixture in a freezer safe container and allow to chill in the freezer for 1-2 hours.
Remove from freezer and scoop into serving dishes. Top with reserved chocolate shavings.
